The Gravy Chronicles: How Our Sausage Gravy Gets Made Every Single Morning
It starts before the sun does. A pot, a whisk, crumbled sausage, and a recipe that hasn't changed since the first counter opened. Here's why our biscuits & gravy is the most-ordered plate in the building.

Every morning at every one of our four counters — Mingo, Yale, Elm Place and Queens Street — the first thing that happens isn't the coffee. It's the gravy. Sausage hits the flat-top and gets broken down by hand, and the roux gets whisked while the dining room is still dark.
There's no packet, no base, no shortcut. Rendered sausage drippings, flour, milk, black pepper, and patience. It's the same method our first location opened with in Broken Arrow, and it's the same reason 'Biscuits & Gravy' sits at the very top of our most-ordered list, year after year.
Why scratch matters at 6 AM
A diner gravy lives or dies in the first ten minutes. Rush the roux and it tastes like paste. Walk away from the whisk and it scorches. So the rule in our kitchen is simple: the person on gravy duty does nothing else until the pot is right.
That's also why our gravy shows up everywhere on the menu — over the open-face biscuit breakfasts with their sausage patties and silver dollar pancakes, alongside the skillets, and smothering the Cowboy Skillet with its strips of chicken fried steak. One pot, a whole morning of plates.
"If the gravy's not worth soppin' up with the last corner of biscuit, we start over."
The correct way to eat it
Regulars have a system: biscuits split and laid open-face, gravy ladled until it pools over the edges, two eggs any style on the side to catch what's left. New folks get pointed straight at an open-face biscuit plate: two sausage patties under white gravy, eggs any style and silver dollar pancakes. Depending on the location it's called the Open Face Breakfast or Mom's Country.
Come hungry. The pot gets stirred all morning, but the biscuits wait for nobody.

Everything above is on the menu right now, at all four locations.
